We bake with high-quality ingredients and use no artificial baking agents or stabilizers. We work with living, fermented doughs. The reward is a taste that we, our families, and our customers have come to love. We are William and Tomáš – William Thomas Artisan Bakery. Like any successful business, we started in a garage. That was in 2016. Our first baking experiments took place in the garage, where we tried to recreate the softness and flavor of French pastries as we remembered them from our travels. We also consulted experts. How do you make the perfect butter croissant? Expert: “Use spreadable margarine and butter flavoring.” And there you have it. WT: “But we don’t want margarine or flavoring!” We want to bake butter croissants with butter.” Expert: “That’s not possible.” WT: “Ah. Thank you very much.” We didn’t let the skepticism of the baking experts get to us. We were convinced that we could achieve in Brno what they had achieved in France. It was a long journey, but we finally made it. Voila! After the croissants, we introduced baguettes, toast, sourdough country bread, Pain de Campagne, and more and more pastries are being added gradually. Each variety is preceded by a “testing phase” in which we refine the recipe to perfection. We balance the ingredients, adjust the flavor, the consistency of the dough, the proper baking of the base, the amount of filling, and much more. If it’s fantastic, we introduce the new product to our customers. We enjoy chatting with them right from our bakery window. We sell our pastries there every day.
