- Rohlíky: Everything about the Czech…
Interesting facts about Rohlíky: The Czech milk croissant & original recipe
Anyone who has ever vacationed in the Czech Republic will inevitably encounter it: the Rohlík (Plural: RohlíkyThis elongated, slightly curved milk croissant is far more than just a simple pastry – it’s the absolute foundation of Czech breakfast culture and a true culinary national treasure. Whether fresh from the bakery with butter and jam, savory topped with ham, or as a faithful companion to a hot soup: the Rohlík is simply part of everyday life in the Czech Republic. We’ll tell you everything you need to know about this iconic pastry and provide you with a foolproof original recipe to bake at home in 2026!
💡 Rohlík vs. Croissant: What’s the difference?
Although its shape is reminiscent of a French croissant, a Rohlík tastes completely different. It’s not made from puff pastry, but from a delicate, light yeast-milk dough. Moreover, it’s wonderfully fluffy inside, subtly crispy on the outside, and in the classic version, it’s usually not sweet, but savory with coarse salt and caraway seeds (kmín) or sprinkled with poppy seeds.
🥖 Interesting facts about the most popular pastry in the Czech Republic
In Czech supermarkets and bakeries, Rohlíky are flying off the shelves every second – often costing the equivalent of just a few cents. The love for these croissants goes so far that the largest Czech online supermarket (“Rohlik.cz”) is even named after them!
Traditionally eaten for breakfast, they are also the essential base for the famous Czech party snacks: The thinly sliced Rohlík cheese slices serve as a base for the colorfully decorated Chlebíčky (filled rolls) that are a must at every birthday and New Year’s Eve celebration.

👩🍳 The original recipe: How to bake Czech Rohlíky yourself
Bring the unmistakable aroma of a Bohemian bakery right into your home! This recipe will yield approximately 10 to 12 wonderfully fluffy croissants.
🛒 The ingredients:
- 500 g wheat flour (preferably Czech) hladká mouka or type 405/550)
- 250 ml lukewarm milk
- 50g melted, slightly cooled butter (or lard for traditional crispness)
- 1 packet of dry yeast (or 1/2 cube of fresh yeast)
- 1 tsp sugar (to activate the yeast)
- 1.5 tsp salt
- For spreading & sprinkling: 1 egg (beaten), coarse salt, whole caraway seeds or poppy seeds
🥣 The preparation:
- Prepare the dough: Dissolve the yeast and sugar in the lukewarm milk and let it stand for about 5 minutes until bubbles form. Put the flour, salt, melted butter, and yeast mixture into a bowl and knead to form a smooth, supple dough (ideally for 5–10 minutes with a stand mixer).
- Let go: Cover the dough and let it rise in a warm place for about 45 to 60 minutes, until it has doubled in volume.
- Forms: Divide the dough into 10 equal pieces on a lightly floured work surface. Roll each piece into a smooth ball. Flatten the balls with a rolling pin into thin, triangular discs. Now, starting at the wide end, tightly roll the triangle towards the point to create the typical croissant shape.
- Second walk: Place the shaped Rohlíky on a baking sheet lined with parchment paper (bend the ends slightly inwards) and let them rise, covered, for another 20 minutes. Meanwhile, preheat the oven to 200°C (390°F) using conventional oven settings (top and bottom heat).
- Bake: Brush the croissants thinly with the beaten egg and sprinkle generously with coarse salt and caraway or poppy seeds, if desired. Bake for about 12 to 15 minutes until golden brown and crispy.
Our culinary tip: Let the croissants cool only briefly after baking. Fresh and still slightly warm, they taste absolutely heavenly with a thick layer of butter!
To truly understand the culinary soul of the Czech Republic, you must uncover the secret of the perfect Rohlík. Enjoy baking – or crunching on your next trip to Prague! Dobrou chuť!
